Ingredients
- Sweet potatoes
- Black beans
- Red onion
- Garlic
- Ground cumin
- Smoked paprika
- Rolled oats
- Fresh cilantro (optional)
- Salt
- Black pepper
- Olive oil (for cooking)
- Burger buns
- Your favorite toppings (lettuce, tomato, avocado, etc.)
Instructions
- Prep the Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce 2 medium sweet potatoes with a fork and bake them for about 45 minutes, or until soft. Let them cool, then remove the skins and mash the flesh in a large bowl.
- Prepare the Beans: While the sweet potatoes are baking, drain and rinse a can of black beans. Use a fork to roughly mash them, leaving some beans whole for texture.
- Mix It Up: In the bowl with the mashed sweet potatoes, add the mashed black beans, 1/2 finely chopped red onion, 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 cup rolled oats, and a handful of chopped fresh cilantro (if using). Season with salt and black pepper to taste.
- Form the Patties: Mix everything together until well combined. Shape the mixture into 6 sizable patties. If the mixture is too sticky, add more oats.
- Cook the Patties: Heat a bit of olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes on each side, or until golden brown and crispy.
