Ingredients

For the Stuffed Shells

  • Jumbo pasta shells
  • Vegan ricotta cheese
  • Fresh spinach
  • Garlic
  • Nutritional yeast
  • Lemon juice
  • Salt and pepper
  • Marinara sauce

Instructions

Step 1: Prepare the Pasta Shells

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package directions until al dente. Drain and rinse with cold water to prevent sticking.

Step 2: Make the Filling

  1. In a large mixing bowl, combine vegan ricotta cheese, fresh spinach (chopped), 2 minced garlic cloves, 2 tablespoons of nutritional yeast, juice of half a lemon, and a pinch of salt and pepper.
  2. Mix until well combined.

Step 3: Assemble the Shells

  1. Spread a layer of marinara sauce on the bottom of your baking dish.
